Why Shading Matters
20+ Days in the Dark
Before harvest, matcha tea bushes are shaded for at least 20 days. This forces the plant to overproduce chlorophyll and L-theanine — giving matcha its vivid green colour and signature umami taste. Without proper shading, the leaves turn yellow-green and taste bitter. The length and method of shading is one of the biggest factors separating ceremonial matcha from lower grades.
A Drink with History
From Chinese Monks to Japanese Tea Ceremony
Matcha originated in China during the Tang Dynasty (7th–10th century), where tea leaves were steamed and formed into bricks for trade. In 1191, the Zen monk Eisai brought powdered tea to Japan, where it became central to the Japanese tea ceremony — "chanoyu." Over centuries, Japanese farmers perfected shade-growing and stone-grinding techniques that define matcha as we know it today.
What Makes It Special
You Drink the Entire Leaf
Unlike regular green tea where leaves are steeped and discarded, matcha is stone-ground into a fine powder — so you consume the whole leaf. This means up to 137x more antioxidants (EGCG) than standard green tea. One bowl of matcha delivers the nutritional equivalent of roughly 10 cups of regular green tea, along with a calm, focused energy from the unique combination of caffeine and L-theanine.
Tencha — The Raw Material
Not All Green Tea Becomes Matcha
After shading and harvesting, the leaves are steamed to halt oxidation, then dried flat — at this stage they're called "tencha." Only tencha leaves are ground into matcha. If the same leaves were rolled instead, they'd become gyokuro. The quality of tencha determines everything: its chlorophyll content, amino acid profile, and how smooth the final matcha will taste.
Stone-Ground Precision
One Stone Mill, 40g Per Hour
Traditional granite stone mills (ishiusu) grind tencha at an incredibly slow pace — about 40 grams per hour per mill. This prevents heat build-up that would destroy the delicate flavour compounds and vibrant colour. The result is an ultra-fine powder of 5–10 microns, smooth enough to dissolve in water without grittiness. Industrial grinding is faster but can never match this quality.
Japan vs. China
Two Origins, Different Strengths
Japan produces roughly 3,000 tonnes of matcha per year — mostly from Uji (Kyoto) and Kagoshima. China's matcha production has grown significantly, now exceeding Japan's output. Japanese matcha is prized for its refined umami and tradition, while Chinese matcha offers excellent quality at more competitive pricing — making it the practical choice for food service, beverages and large-scale production.
